We went to the Sunnyside Park BBQ and Beer festival tonight. The Alchemy guys were there as well as some other vendors. Was a great time and all the beer and food was great. Wish we had a space like they do, jealous.

Finally made the four-block hike to Alchemy last night and just caught them before closing (Yelp said 10pm, but apparently it's 8pm on Sundays). They were out of most items and all ribs but my wife and I split a pound of brisket that I mightily enjoyed. I want the place to thrive. I'll certainly be back on the earlier side to catch some ribs and frog legs.

I live a block away and I finally checked it out after seeing all the buzz/hype, ordered about $60 bucks worth of food (I eat a lot) and was pretty disappointed with my selection, but it was clear the bbq had been sitting out for a long time. Is there a "best" time to go or a time where it's guaranteed right out the smoker?

I really want to support it but at the same time I don't like the idea of spending 40+ bucks on bbq each time I go and being disappointed.

yeah definitely - you shouldn't pay that much for something you don't like. Go as early as possible and you'll get the freshest stuff - 6pm they open. And they sell out of some things within the first hour. As an added bonus, happy hour is until 6:30, which is a dollar off beers.

Finally got around to visiting Alchemy tonight. Got there around 7pm and ordered beef ribs & some cole slaw to go. Enjoyed a cold beer and got to sample my order. Very nice people behind the counter and we discussed the sister restaurant John Browns in LIC which i've been to. The ribs at John Browns are Kansas city style, vs Texas style at Alchemy. I let them heat up in my oven for an hour at 200 degree's and turned off the oven after 20 min. Very good flavor and tender meat on the thicker ribs.

Yeah I went at 6. It was mostly dry/tough bbq and looked nothing like the pictures on seriouseats. the fat was no longer glistening/moist like I've had at Delaney, Mighty Quinn's, even Hill Country. The only worse BBQ i've had in recent memory was fatty cue, which was cheaper. I'll try and go back on a Tuesday at 6 though.

We went on a Sunday, maybe an hour before closing (thy close early on Sundays). The brisket and soft shelled crabs were excellent, and they gave us one leftover chicken! The duck was good too, but I don't know if I'd order it again.

Went there tonight for the second time.  Brisket and duck were amazing.  Best brisket in Queens by far.  The potato salad was great, as was the cole slaw, which was much improved over the first time we went.  Talked to the pit master (who is also originally from Hill Country) and he was saddened that he had all this food sitting there and no customers to eat it.  In the hour and a half we were there only one other woman came in to order, and we were the only customers sitting down eating.  I really hope they stick around but I'm concerned Alchemy will result in a failed experiment.  Can we all try to support this joint?

I'm going to take a guess here.

It's about demographics.

My guess is that immigrants here in JH most often like to eat in their own cultural restaurants.

Non immigrants in Jax Heights are often couples with young families who mostly I imagine order in...or cook!...or go to diners where there are kiddie friendly meals.

The population of young or older couples and singles who might frequent this establishment...is here...but not in the numbers that exist in NYC elsewhere. 

Jax Hts was built for families.  And continues, I believe, to serve that function.

And so the market for an establishment like this just may be kinda limited in Jax Hts.

Not that it isn't appreciated. Just that the population who might frequent it... may simply not be here...and so the buzz isn't there.

And then there's the vegetarians....like me...who are no help at all. (And I haven't even mentioned the halal/kosher problems that exist...)

I know that Alchemy has been mentioned in some online mags and blogs, and seriously talked about on this forum, but do the owners do any advertising other than that? why not in Metro or Boro mag, or even local neighborhood ads?  If you dont read the posts on this website, or come by those few restaurant reviews, how would anybody really know they are there?  I certainly wouldn't, and I only live 3 blocks away from it! I feel like its a problem of marketing, i really don't think its a cultural thing.  I would venture to say there are tons of meat-eaters in these many many co-ops and residences that would love to know about this place.  Why not have a friday or Saturday specials, or coupons or anything to entice people to come in?  I think it would be likely to drum up business.   and a website people!!  (not just a facebook thing) Also, honestly, if you walk by the place, it doesn't look like anything would be remotely outstanding going on inside...those tarp signs strung onto the awning actually look kind creepy to me (just my opinion, no need for any comments on superficiality of signage).  but seriously, if a place looks inviting, people will feel invited.  and thats my two cents :)

I think all these things are a factor.  Demographics, advertising, signage, etc.  I think its location off the beaten path as well as in the back of a bar not known for the sprightliest of clientelle (don't get me wrong, i like it, but hip it is not).  If you go to astoria, which is a neighborhood more suited to foodies interested in this type of cuisine, there are three bbq places, not to mention the strand, a block long giant with indoor and outdoor seating and live music.  I just dont know what would draw out of towners (except die hard bbq lovers). To this location to make it viable?

Also I might point out that while we were there the bar crowd consisted of six men, none of whom ordered food while I was there.  Maybe if Alchemy included, like its predecessor, a pulled pork or bbq chicken sandwich (they did have a burger for $10)for $7 rather than pounds of meat (they do offer quarter or half pounds, but this isn't advertised) for $25, the built in clientele may be more likely to order food there.  Like Jeff alluded to in his semi-controversial "culture clash" comment, it's improbable to have rented food space in the back of a bar be successful that doesn't cater to the built in crowd of that bar, at least a little bit.

I don't think demographics are really an issue. This space has served barbecue for at least a decade: they must have been serving food to someone.

I agree with ptbass75 about the menu. Fixed-price sandwiches might be more accessible to some than by-the-pound meat. Maybe their menu would be more attractive if it resembled the one at John Brown Smokehouse, where each meat is available as a platter, sandwich, or by-the-pound.
