Alchemy, Texas BBQ
« on: March 28, 2013, 09:39:08 PM »
Ok, so looks like the dude from John Brown's Smokehouse is re-opening Legends.  I really hope this brings some exciting new energy into our beloved hood.  Welcome and support em.  Here's the link.

Interesting, I wonder if they bought the place? From a bartender, I thought it was the same owner bringing in new people. Of course, he didn't say anything about closing completely for a period. Is it still called Legends?

I kind of hope it's a new owner and the have a better tap list. That would be awesome.

alchemy is run by a different person than the previous owner of the bbq operation. he rents the back space from the owners, same arrangement that's been in place since robert pearson moved the original pearson's there from LIC back in the '90s.

if it's the john brown's folks, the food is going to be excellent. they have a really good smoker setup and all in place, the last crew just lost a little mojo over the past couple of years.

Confirmed, it is the John Brown folks. This will be treated as their BBQ laboratory, so it sounds like they'll be trying out new recipes on us. I am delighted!

I'm glad to hear that barbecue will remain available in the neighborhood. Friends from around the country have been trying to teach me recently about all the different regional styles of barbecue: Carolinas, Kansas City, etc. Any idea what distinguishes the BBQ at Legends as Texan?

texas bbq is primarily beef -- brisket and ribs -- and is usually served unsauced/with sauce on the side. north carolina, memphis are pork-centric, and there's a really specialized kentucky strain (hard to come by in this area) of mutton/lamb.

Went to the Grand Opening tonight.  Brisket was off the hook.  Homemade BBQ sauce was super tasty, and on the spicy side.  Same went for the slaw.  Also had the chicken, which was a little intense on the smokiness and spice for my taste (however perfectly cooked), but others seemed to enjoy.  Also sampled the wings, which were nice and had a sweet and spicy taste.  The owner says once they get their kitchen fully up and running they are going to offer Tex Mex meals in addition to the Texas style BBQ.  The crew there seem eager and willing to please and welcome feedback and suggestions.  Looking forward to returning.  Next time I think its ribs...

was there also. the brisket was about the best i've ever had outside texas. the ribs were very good as well. we tried the goat ribs, which my friends liked, but i found a little chewy.

This place is the truth!

I also tried the goat ribs. I really don't think there's a practical way to bbq goat without being chewy--- that's why it's always in stews. But yeah, this is something new for JH. and awesome. If they can do well, other similar places will come too.

So what's the beer on tap scene? I played at the one in LIC and they had a great selection of beers on tap...

on tap? meh, a small selection -- maybe eight or so with a couple seasonal selections. a few more in bottles, but nothing awesome on that front, either. they might be able to have some impact on the legends guys, who seem really happy to have them there ("coach," the main legends guy, is an old neighbor of mine and a terrific bar owner)

So the bar part is different from the bobbyQ part? I hope they can get some "impact", the LIC joint had some tasty suds.

yeah, these guys, like Pearson and his successors, rent a space in the back of a bar that's been in the neighborhood forever. nice, friendly little bar, not a dive, just not geared towards folks who consider themselves sophisticated drinkers.

Yeah, I don't expect them to go full craft, that's not the kind of place it is. But, it would be awesome if they ditched the Sam Adams seasonal for a local.
