Hello! Do we need to let you know if we plan on attending the open house? Also, I noticed in another listing for the Greystones, that there is a no subletting policy. Is that the same for all of the buildings?

To my knowledge, open house means they show the apartment on a specific day and hours.   Realtors will want you to call because they want to get your information.  Screw that if you don't want to be bothered.  You can just show up. 

Many co-ops have no subletting policy.  That's fairly common.  But not all.  The thing is you can buy into a building that allows subletting and the Board of Directors can change that rule sometime in the future but if it's important to you ask about it each place you're interested in.
