O.K. Shelby I'll be mindful of that but I do find it odd that he did not make good on his prize..........IMHO I find this whole contest thing a bit SLIMY!!!!!!!!!!

1 Big Avacato (i have very specific likes in avocados, BUT...)
1 small tomate peeled and make sure its ripe otherwise use canned and squeeze them semi dry (that's right, I use canned _ WHAT!!!  :tickedoff:)
1 small onion (chopped)
1 jalapeno (if you don't want spice just use 1 tablespoon  of finely chopped bell pepper- If you like it spicy 1/4 of habanero or Jamaican aji)
A handful of cilantro (it's like 2 tablespoons after you chop it)
2 recaitos, very chopped (I think they call it cilantrillo - hard to find)
Salt and pepper to taste
pinch of sugar (optional - specially if you mess up on the salt)

Mash it up baby
ad everything else (no technique)
grab a spoon and moved it around darlings.
squeeze a fresh lime just before you serve it.

One thing I'll do if I can't find/wait for ripe avocados is slice the not-quite-ripe ones from the store to about 3/4 inch slices, and grill them (outdoors in summer out of the city, on the George Foreman grill if stuck indoors) until they're they've softened and gotten some nice grill marks in them. Not the same as perfectly ripe, but a lot better than the hard unripe ones you get at the store.

Hey, they are good for You and if you spread some over celery and pate on regularly You'll keep Johnson boy there up and ready...hehehe

BTW, recaito is AKA culantro in other places (All I know it grew wild everywhere when I was Kid in la isla)

I was curious, so I googled.  This wikipedia entry explains what culantro is.

The pronunciation is kool-lawn-tro, not su-lawn-tro

Eryngium foetidum is a tropical perennial and annual herb in the family Apiaceae. It is native to Mexico and South America but is cultivated worldwide. In the United States, where it is not well known, the name culantro sometimes causes confusion with Coriandrum sativum (also in Apiaceae), the leaves of which are known as cilantro, and which culantro is even said to taste like.

Yes.  Culantro leaves are noticeably much larger than cilantro leaves, and I have heard that Culantro leaves have a more intense flavor and is the preferred choice in traditional Caribbean dishes.  I use cilantro a lot, but have heard of the similarities between the two, and was wondering if they come from the same plant (lack of a better word).  Now.. is culantro the same as recao / recaito?

My Grandma used recao in all her beans and stews.  She made "recaito' two or three times monthly.  She basically added a little bit of oil, vinegar and I think a little bit of water if need to a bunch or recao in the blender.  She added some ajis, garlic and some salt.  I don't know her exact recipe but my sister in law started making it after she saw me do it with the cilantro.  I use both since it's difficult to find recao on the regular.  But IMO recao does have a more intense flavor enhancer than cilantro.  Well, I may be partial since it just reminds me so much of my childhod years when Abuela sent me to the side of casita to pluck the leaves.  I didn't mind, it sure beat pulling yuca, yautia & malanga from the soil..  :2funny:
