Interesting article on what restaurants have to deal with in the Health Department inspection process, it goes to show you that points and or letter grade system is more complicated than what it seems and does not really tell the whole story, rules and regulations of mobile food carts is even more arcane. I wonder how many of our own kitchens would pass such a process?
