Sweet corn
« on: April 27, 2018, 07:30:30 PM »
I've noticed fresh corn being sold at some of the produce stores. I think it's from Florida. I don't generally buy outside the local season but I wonder if anyone has tried it?

right now, it's the best we can do, but i wouldn't recommend it too highly. corn starts to degrade really quickly after picking, and the sweetness disappears within 48 or72 hours, leaving it more starchy and chewy. i wonder if the late spring means later corn/other crops up this way.....

My mom lives in FL and their local sweet corn is really good (and I grew up next to a corn field out on the north fork and am very picky about it).  Not sure how well it travels, though.

I'll second those who said it doesn't travel well. I also grew up around fresh Southern corn, and the rule for the best you could get was "don't pick it until the pot's boiling!"

freezing fresh corn when it's in season is worth it. Most of us on this board probably don't have the size freezers our friends and family who live outside the city do, but a couple bags to tide you over is a nice treat.
